Avocado, Corn & Black Bean Salad



Ingredients

12 oz FROZEN CORN, thawed & cooled
1 large GREEN BELL PEPPER, chopped
12 oz CHERRY TOMATOES, halved
15 oz can BLACK BEANS, rinsed & drained
3 AVOCADO, cut into cubes
2/3 cup FRESH CILANTRO, chopped
3 tbsp OLIVE OIL, EXTRA VIRGIN
2-3 LIMES, JUICED
1 tbsp HONEY
3 cloves GARLIC, grated
SEA SALT AND PEPPER, TO TASTE 

Method
  1. In a large mixing bowl whisk together, olive oil, lime juice, garlic, honey, sea salt and pepper for the dressing. 
  2. Stir in remaining ingredients and additional sea salt and pepper if needed. 
  3. Cover and refrigerate until ready to serve (if making more than 2 hours ahead, refrigerate without avocados and add before serving). 
  4. Serve as a side, or topping for grilled chicken, fish or burgers. 

Serves 10-12.


VARIATIONS: Add fresh chopped pineapple or mango for sweetness.

Greek Spinach Quinoa Salad

Ingredients
  • Salad:
3/4 cup RED QUINOA (rainbow or regular)
1 large CUCUMBER, chopped (seedless or regular with seeds removed)
1 large RED TOMATO, chopped
1 small ONION, chopped
3 cloves GARLIC, minced
15 oz GARBANZO BEANS, rinsed, drained
1 cup PITTED WHOLE KALAMATA OLIVES, chopped
3 cups FRESH SPINACH or ARUGULA (baby or regular, chopped)
  • Dressing:
2 tbsp OLIVE OIL, EXTRA VIRGIN
JUICE OF 1 LEMON
1 tsp OREGANO, dried
SEA SALT AND PEPPER TO TASTE
1/3 cup FRESH BASIL, snipped (dill, parsley or combination)
1/2 tsp CRUSHED RED PEPPER (optional)

Method
  1. Cook quinoa in water according to package directions, fluff with a fork and cool.
  2. Combine cooled quinoa, cucumber, tomato, onion, beans and olives in a large glass bowl.
  3. In a small measuring cup whisk lemon juice, olive oil, oregano, garlic, salt, pepper and red pepper, if using. Pour dressing over quinoa/vegetable mixture. Fold in spinach and fresh herbs. Serve immediately or refrigerate a few hours before serving. Serves 8. Serving size about 3/4 cup. Top salad (or serve in small bowls on the side) with crumbled feta cheese, tzatziki Greek yogurt dip or hummus.
  4. VARIATIONS: Substitute white northern beans for garbanzo. Add sun dried tomatoes.

Almond Butter Chicken Salad







Ingredients

1 lb CHICKEN BREASTS, BONELESS, SKINLESS
1/2 cup CHICKEN BROTH, LOW SODIUM*
SEA SALT AND PEPPER, to taste (optional)
2 tbsp ALMOND BUTTER, no sugar added
1 tbsp RAW or PURE HONEY
2 tbsp SOY SAUCE, LOWER SODIUM*
1 tsp SRIRACHA HOT SAUCE (optional)
4 tsp RAW ALMONDS, chopped


MIXED BABY GREENS, PURPLE CABBAGE, GREEN ONION, CARROT, RED PEPPER (for salad)







Method

  1. Place chicken in a cooking sprayed crock pot or baking dish with chicken broth, sea salt and pepper to taste. 
  2. For crock pot cook on low 6-8 hours or high 3-4 hours; for oven baking cover and bake at 350 degrees F for 25-30 minutes. 
  3. While chicken cooks whisk together almond butter, honey (may need to heat slightly to thin), soy sauce and hot sauce if using. 
  4. Remove any fat and shred hot chicken with forks; then stir in almond butter sauce to coat chicken well. 
  5. Top with chopped almonds and serve over steamed brown rice, vegetables or mixed greens with red pepper, green onion, purple cabbage, carrot & avocado slices (whisk extra almond butter sauce for dressing if desired). Serving size, about 4 oz. chicken.

    Thai Chicken Quinoa with Creamy Sriracha Dressing




    Ingredients


    Thai Quinoa: 1 cup QUINOA, rinsed & drained
    1 1/2 lbs CHICKEN BREASTS, BONELESS, SKINLESS
    SEA SALT AND PEPPER, to taste
    1/2 CUCUMBER, SEEDLESS or REGULAR, chopped
    5 CARROTS, peeled, chopped
    1 RED BELL PEPPER, chopped
    4 GREEN ONIONS, sliced
    4 medium RADISHES, sliced thinly
    2/3 cup FRESH CILANTRO or BASIL (more or less to taste)


    Creamy Sriracha Dressing: 2/3 cup CANNED LITE COCONUT MILK
    1-2 tsp SRIRACHA HOT SAUCE
    2 tbsp PURE or RAW HONEY
    2 tsp GROUND GINGER POWDER (or 1 Tbsp fresh grated)
    4 cloves GARLIC, minced (or 1 tsp garlic powder)
    JUICE FROM 1/2 LEMON
    2 tbsp LOW SODIUM SOY SAUCE*
    SEA SALT AND PEPPER, to taste
    *Gluten & dairy free option: Use wheat-free tamari soy sauce or liquid aminos.



    Method


    1. Cook quinoa with water or low sodium broth according to package directions and cool. Sprinkle chicken with sea salt and pepper; bake at 350 degrees F, covered in an oiled casserole dish for 25-30 minutes. Let chicken cool and chop into bite size pieces.
    2.  For the dressing: whisk all dressing ingredients together adding Sriracha hot sauce to taste; set aside (use recipe amount for a very lightly dressed salad, double recipe if more dressing is preferred).
    3. Toss all prepared vegetables with quinoa, chicken, dressing and cilantro or basil (or reserve dressing and drizzle over top of each individual portion). Serving size about 1 cup.
