Pear,Pomegranate And Roasted Butternut Squash Salad With Maple Sesame Vinaigrette





Ingredients
1 medium butternut squash, peeled, Blade B, noodles trimmed
salt and pepper, to taste
1 large asian pear
5 oz container of arugula
¾ cup pomegranate seeds
3/4 cup roughly chopped walnuts

For the vinaigrette:
1 tablespoon real maple syrup
1 tablespoon extra virgin olive oil
1 tablespoon sesame oil
2 tablespoons apple cider vinegar
1 teaspoon white sesame seeds
1 tablespoon soy sauce
pepper, to taste
1 garlic clove, crushed and then minced



                           



Instructions
  1. Preheat the oven to 400 degrees.
  2. Line a baking sheet with parchment paper and lay out the butternut squash noodles. 
  3. Coat lightly with cooking spray and season with salt and pepper and roast for 8-10 minutes or until cooked through but still al dente.
  4. While the squash cooks, combine all of the ingredients for the vinaigrette and set aside.
  5. Spiralize the pear and add to a large mixing bowl with the arugula and walnuts. Once butternut squash is done, add it to the large bowl, drizzle over the vinaigrette and toss thoroughly.
  6. Serve immediately.

Chicken BaCado Casserole



Ingredients

14 oz box whole wheat penne pasta
5 slices turkey bacon, cooked + crumbled into pieces
1 lb boneless, skinless chicken breasts, cubed into bite-sized pieces
1 tsp salt
1 tsp black pepper
2 large red bell peppers, diced
1 Tbsp garlic, minced
1 can Ro*Tel® Original Tomatoes and Green Chillies, do not drain
1 cup reduced-sodium chicken broth
½ cup reduced-fat sour cream
½ tsp onion powder
2 avocados, pitted + diced

Optional*:

reduced-fat shredded cheddar cheese




Method
  1. Cook pasta according to al denté directions on box. 
  2. Set aside in a large bowl. 
  3. Cook bacon according to directions. Crumble bacon into a small bowl and set aside. 
  4. Preheat oven to 350 degrees. Lightly coat a 9" x 13" baking dish with nonstick cooking spray, set aside. 
  5. In a large skillet over medium heat, spray skillet generously with nonstick cooking spray and add chicken pieces. Sprinkle chicken with ½ tsp salt and ½ tsp pepper while cooking. Cook chicken until no longer pink in center, about 6-8 minutes. Place cooked chicken in the large bowl with the pasta. 
  6. In the same skillet, add minced garlic and red peppers. Cook for 2-3 minutes until peppers have softened. Add Ro*Tel® tomatoes, chicken broth, reduced-fat sour cream, garlic powder and the remaining ½ tsp salt, ½ tsp pepper. Stir sauce over medium heat until it comes to a low boil. Simmer for about 5-8 minutes, until the majority of liquid evaporates, stirring occasionally. Remove from heat. 
  7. Gently mix together the cooked pasta, chicken, and sauce. 
  8. Transfer mixture to casserole dish and top with chopped turkey bacon. Spray lightly with nonstick cooking spray and cover with foil. 
  9. Place casserole in oven for 15-20 minutes until heated through and sauce is bubbling. Let casserole sit for 5-10 minutes, excess liquid will be absorbed into pasta. 
  10. Top with diced avocado and (optional) cheddar cheese, serve immediately.

    Cincinnati Chili

    Ingredients

    1 lb lean ground beef
    2 tsp extra virgin olive oil
    1 Tbsp minced garlic
    1 onion, chopped
    15 oz can diced tomatoes
    15 oz can kidney beans, rinsed + drained
    1½ Tbsp Worcestershire sauce
    1 Tbsp red wine vinegar
    1 Tbsp chili powder
    ½ Tbsp unsweetened cocoa powder
    1 tsp cinnamon
    ⅛ tsp nutmeg
    1 tsp cumin
    ¼ tsp black pepper
    ¼ tsp cayenne pepper
    4 cups cooked whole wheat spaghetti
    6 Tbsp reduced-fat, shredded sharp cheddar cheese
    6 Tbsp onion (for optional topping), diced 

    Instructions
    1. Heat extra virgin olive oil in Dutch Oven over medium high heat. 
    2. Add lean ground beef and cook, making sure to break the beef up with a spoon or spatula. 
    3. Cook about 5-7 minutes, until meat is no longer pink. 
    4. Add onion and garlic, cook and stir for 3-4 minutes, until onion has softened. 
    5. Add tomatoes, Worcestershire sauce, red wine vinegar, chili powder, unsweetened cocoa powder 
    6. cinnamon, nutmeg, cumin, black pepper, and cayenne pepper to beef mixture. 
    7. Bring mixture to a boil. 
    8. Reduce heat and simmer, partially covered, making sure to stir occasionally. 
    9. Simmer for 1 hour. 
    10. Serve over cooked whole wheat spaghetti and top with reduced-fat sharp cheddar cheese and onions (optional).

      Chicken & Brussels Sprouts with Mustard Sauce

      Chicken & Brussels Sprouts with Mustard Sauce
      Ingredients
      2 tablespoons olive oil, divided
      4 (6-ounce) skinless, boneless chicken breasts
      3/8 teaspoon salt, divided
      1/4 teaspoon freshly ground black pepper
      3/4 cup fat-free, lower-sodium chicken broth, divided (certified gluten-free if necessary)
      1/4 cup unfiltered apple cider
      2 tablespoons whole-grain Dijon mustard (certified gluten-free if necessary)
      2 tablespoons butter, divided
      1 tablespoon chopped fresh flat-leaf parsley
      12 ounces Brussels sprouts, trimmed and halved

      Method
      1. Preheat oven to 450°F. 
      2. Heat a large ovenproof skillet over high heat. 
      3. Add 1 tablespoon oil. Sprinkle chicken with 1/4 teaspoon salt and pepper; add to pan. 
      4. Cook 3 minutes or until browned. Turn chicken; place pan in oven. Bake at 450° for 9 minutes or until done. 
      5. Remove chicken from pan; keep warm. 
      6. Heat pan over medium-high heat. 
      7. Add 1/2 cup broth and cider; bring to a boil, scraping pan to loosen browned bits. 
      8. Reduce heat to medium-low; simmer 4 minutes or until thickened. Whisk in mustard, 1 tablespoon butter, and parsley. 
      9. Heat remaining 1 tablespoon oil and 1 tablespoon butter in a large nonstick skillet over medium-high heat. Add Brussels sprouts; sauté 2 minutes or until lightly browned. Add remaining 1/8 teaspoon salt and 1/4 cup broth to pan; cover and cook 4 minutes or until crisp-tender. Serve sprouts with chicken and sauce.

      Fish Sticks

      Ingredients

      1½ lbs tilapia fillet
      ¼ cup ground flax meal (flaxseed that has been ground)
      ¼ cup reduced-fat Parmesan cheese
      ½ cup whole wheat breadcrumbs
      4 whole egg whites
      2 tsp Old Bay® seasoning
      ½ tsp salt
      ½ tsp black pepper
      ¼ cup organic grapeseed or Canola oil

      Optional*:
      malt vinegar
      tartar sauce
      *Optional ingredients are not included in the nutritional calculations.

      Method
      1. Cut fish into 1-nch strips and season with salt and pepper. Set aside. 
      2. Put egg whites in a shallow bowl and whisk. 
      3. In another shallow bowl, add Parmesan cheese, flax meal, breadcrumbs, Old Bay® seasoning, salt and pepper and mix well. 
      4. Heat ⅛ of a cup the Canola oil in a deep frying pan on medium-high heat. 
      5. Dip each piece into the egg whites, then into the breadcrumb mixture. Make sure to coat fish evenly. Set aside, I used a baking sheet. 
      6. In shifts, place half of the fish in the hot frying pan in a single layer. 
      7. Cook on each side until golden brown - about 4 minutes per side (thinner sticks will cook faster). Use tongs to rotate them around the pan so they cook evenly. Set aside on a clean plate and cover with foil to keep warm. 
      8. Heat the remaining ⅛ cup oil and cook the last half of the fish the same way. 
      9. Serve hot with malt vinegar or a light tartar sauce.

      Ingredients

      1 pound thinly sliced chicken breast
      1 package of baby spinach (10oz)
      1 can of no salt added corn
      2 bell peppers (we used one red & one orange for color!)
      1/2 red onion sliced
      1 jalapeño pepper sliced
      3 tomatoes
      1/4 cup reduced fat cheddar cheese
      1 lime
      1 tbsp extra virgin olive oil
      Cilantro Lime Vinaigrette
      1/4 cup extra virgin olive oil
      2 limes
      2 tbsp rice wine vinegar
      1 bunch of cilantro 
      1/4 tsp garlic powder
      1/4 tsp onion powder
      1/4 tsp brown sugar
      Salt & Pepper


      Let's get cooking!

      Method
      1.  Add one tbsp olive oil to grill pan and heat to medium high heat. Add chicken breast and grill for 5-6 minutes on each side until cooked through. Before removing chicken, squeeze juice from half the lime into pan to coat. Set aside.
      2. Add corn for 2-3 minutes until golden brown. Set aside. Grill jalapeño pepper for 60 seconds to warm through.
      3. Slice bell peppers and onion and sauté for 4-5 minutes until tender crisp. Set aside.
      4. Chop tomatoes and combine with 1/4 of your cilantro and the juice of half a lime.
      5. To make dressing, combine cilantro, olive oil, juice of 2 limes, vinegar, garlic powder, onion power, brown sugar, salt & pepper. Pulse in blender to combine.
      6. Plate up spinach, corn, peppers & onions, chicken, tomatoes and top with 1 tbsp of cheddar cheese. Serve up with 1/4 of your dressing on the side & enjoy :)



      Skinny Baked Broccoli Mac & Cheese




      Ingredients

      12 oz (approx. 1 box) whole wheat fusilli pasta
      1 1/2 tbsp butter
      1/4 cup minced onion
      1/4 cup flour
      2 cups skim milk
      1 cup fat free chicken broth (vegetarians use vegetable broth)
      2 cups reduced-fat sharp cheddar
      12 oz fresh broccoli florets (I used pre-cut bag)
      2 tbsp grated parmesan
      1/4 cup seasoned bread crumbs

      Optional additions: salt and pepper to taste Method

      1. Cook pasta and broccoli together in a large pot of salted water, according to package directions for al dente (or slightly under cook 2 minutes). 
      2. Spray a baking dish with cooking spray. Preheat oven to 375°. 
      3. In a large, heavy skillet, melt butter. 
      4. Add onion and cook over low heat about 2 minutes, add flour and cook another minute, or until the flour is golden and well combined. 
      5. Add milk and chicken broth and whisk, raising heat to medium-high until it comes to a boil; cook about 5 minutes or until the sauce becomes smooth and thick. Season with salt and pepper (optional). 
      6. Once the sauce is thick, remove from heat, add cheese and mix well until cheese is melted. Adjust salt and pepper to taste, add cooked macaroni and broccoli and mix well. Pour into prepared baking dish. 
      7. Top with grated cheese and breadcrumbs. Spray a little more cooking spray on top. 
      8. Bake for 15-20 minutes, then broil for a few minutes to get the breadcrumbs golden.

      Basil-Feta Sauce Chicken





      Serves: Serves 4
      Ingredients
      FOR THE CHICKEN
      3 tablespoons olive oil
      2 yellow onions, sliced
      1 garlic clove, minced
      2 tablespoons olive oil
      12-ounces (about 4) chicken breasts
      salt and fresh ground pepper, to taste

      FOR THE SAUCE
      1 cup crumbled feta cheese
      1 tablespoon sliced basil, packed
      2 garlic cloves, minced
      2 tablespoons milk
      salt and fresh ground pepper, to taste
      pinch sugar
      pinch chili powder


      Method
      1. Pound chicken breasts to an even thickness; do not pound thin. 
      2. In a nonstick skillet heat olive oil over medium-high heat. 
      3. Add onions and cook for 3 to 4 minutes, or until translucent. 
      4. Stir in garlic and continue to cook for about 30 seconds, or until fragrant. 
      5. Transfer to serving plate and set aside. 
      6. Season chicken breasts with salt and pepper. 
      7. Place skillet over medium-high heat and add 2 tablespoons olive oil. 
      8. When oil is hot, add chicken breasts to skillet and cook 7 minutes; flip and continue to cook for 5 to 6 minutes or until thoroughly cooked and browned on both sides. 
      9. Remove from skillet and transfer to serving plate over bed of onions. Keep covered and warm; set aside. 
      10. MAKE THE SAUCE 
      11. Set up a double boiler by adding an inch of water to a small pot. 
      12. Bring water to a rapid boil and lower to medium-heat. 
      13. Combine all the sauce ingredients in a mixing bowl that is larger than the small pot. 
      14. Set the bowl over the pot, making certain that the bowl can't touch the water. 
      15. Mix and stir until sauce is smooth and creamy; about 3 to 4 minutes. 
      16. If it's too thick (it should be slightly pourable) add a tablespoon of milk. 
      17. Taste and adjust accordingly. 
      18. Remove from heat and pour sauce over prepared chicken breasts.
      Serve. Notes
      Pound chicken pieces so that they are all about the same size. Do not pound them thin!
      Serve with pasta, rice, orzo, or a simple vegetable side dish.

      One-Pot Chicken Fajita Pasta

      Ingredients

      2 tsp olive oil
      1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
      1 tsp kosher salt
      1 1/2 tsp ground cumin
      1 tsp paprika
      1/2 tsp chili powder
      1/2 tsp garlic powder
      1 large white onion, sliced
      1 large red bell pepper, sliced
      1 large yellow bell pepper, sliced
      3 cloves garlic, minced
      2 cups less-sodium chicken broth
      1 (10-oz) can Mild Ro-Tel Diced Tomatoes & Green Chiles
      7 oz pasta (use gluten-free pasta for GF)
      1/2 cup light sour cream
      1 scallion, diced
      2 tablespoons chopped cilantro
      4 oz diced avocado (from 1 small)

      Method:

      1. Season chicken with 3/4 tsp salt, 1 tsp cumin, 1/2 tsp paprika, 1/4 tsp chili powder and 1/4 tsp garlic powder. 
      2. In a large deep nonstick skillet, heat 1 teaspoon olive oil over high heat. When the oil is very hot, add the chicken and cook until browned, stirring about 5 to 6 minutes. Transfer to a plate and set aside.





      Reduce heat to medium, add the remaining teaspoon of olive oil to the skillet. When the oil is hot, add the onions, bell peppers, and remaining 1/2 tsp cumin, 1/2 tsp paprika, 1/4 tsp chili powder and 1/4 tsp garlic powder, 1/4 tsp salt. Cook, stirring occasionally, until soft, about 10 minutes. Add minced garlic, and stir until fragrant and well combined, about 30 seconds. Remove from heat and transfer to the plate with the chicken.




      In the same skillet, add the broth, diced tomatoes and uncooked pasta. Stir to combine and bring to a boil, then cover, reduce heat to medium-low, and cook for 15 minutes until pasta is tender and liquid is mostly absorbed. Add the chicken and veggies back into the skillet and stir to combine until heated through, about 2 minutes. Mix in the sour cream and top with scallions and cilantro. Serve with avocado on top.













      One Pot Zucchini Mushroom Pasta

      One Pot Zucchini Mushroom Pasta









      Ingredients

      1 pound spaghetti
      1 pound cremini mushrooms, thinly sliced
      2 zucchini, thinly sliced and quartered
      2/3 cup peas
      2 cloves garlic, thinly sliced
      2 sprigs thyme
      Kosher salt and freshly ground black pepper, to taste
      1/3 cup grated Parmesan
      1/4 cup heavy cream

      Method

      1. In a large stockpot or Dutch oven over medium high heat, combine spaghetti, mushrooms, zucchini, peas, garlic, thyme and 4 1/2 cups water; season with salt and pepper, to taste. 
      2. Bring to a boil; reduce heat and simmer, uncovered, until pasta is cooked through and liquid has reduced, about 8-10 minutes. 
      3. Stir in Parmesan and heavy cream. 

      Easy One-Pot Jambalaya

      Ingredients

      2 tablespoons olive oil
      1 medium yellow onion, chopped
      1 medium green bell pepper, chopped
      3 stalks celery, chopped 
      1 cup brown rice, uncooked (certified gluten-free if necessary)
      1 1/2 pounds boneless skinless chicken breasts, chopped
      12 ounces andouille sausage, sliced
      1 1/2 cups low-sodium chicken broth (certified gluten-free if necessary)
      1/2 cup dry white wine
      1 (14-ounce) can diced tomatoes
      2 teaspoons Cajun seasoning
      1 teaspoon dried thyme
      1/2 pound shrimp, peeled and deveined
      1/4 cup fresh parsley, chopped
      Kosher salt to taste

      Method
      1. In a large pot or French oven, add the olive oil and heat to medium. Add the chopped onion, bell pepper, celery and brown rice. 
      2. Sauté, stirring frequently until vegetables have softened but are still al dente, about 10 minutes. 
      3. Add the chopped chicken and andouille sausage and continue sautéing until chicken is slightly browned, but not cooked through, about 3 minutes. 
      4. Add the chicken broth, white wine, diced tomatoes, Cajun seasoning, and dried thyme and stir everything together. Bring pot to a full boil, then reduce the heat and simmer for 40 to 50 minutes until rice is soft. 
      5. Add the peeled raw shrimp and fresh parsley and cook until shrimp is cooked through, about 5 minutes. 
      6. Allow the jambalaya to sit about 10 to 15 minutes before serving, allowing it will thicken up. Add salt as desired.

        Low Calorie Crock Pot Chicken Taco Soup

        Ingredients

        1 can black beans
        1 can kidney beans
        1 onion
        2 chili peppers
        1 can tomato sauce
        10 oz package of frozen corn
        2 cans diced tomatoes with chilies
        1 tbsp chili powder
        1 pack low sodium taco seasoning
        24 oz boneless, skinless, chicken
        1/4 cup cilantro

        Instructions
        1. First, chop up your onions and chilies, set aside. 
        2. In a crock pot combine sauce,corn,tomatoes,chili powder,taco seasonings, beans, onions, and chili's. Let the chicken rest on top. Cook in the crock pot on high for 5 hours. 
        3. After 5 hours, take the chicken out and shred it, then place it back in the crock pot and stir. 
        4. Turn your crock pot on low and let the soup cook one more hour. 
        5. After 1 hour serve over rice (or by itself) and enjoy!

        Maple-Soy Glazed Salmon & Roasted Vegetables

        Ingredients
        • For Salmon: 
        • 1 1/4 lb SALMON FILLET (preferably wild)
          1/4 cup 100% PURE MAPLE SYRUP 
          2 tbsp SOY SAUCE, LOWER SODIUM* 
          1 tsp RICE VINEGAR 
          1 clove GARLIC, minced (or 1/4 tsp garlic powder) 
          1 tsp FRESH GINGER, minced (or 1/2 tsp ground ginger) 
          SEA SALT AND PEPPER TO TASTE 
          1/2 tsp SRIRACHA HOT SAUCE (optional ) 
          2 GREEN ONIONS, sliced 
          SESAME SEEDS, for garnish (optional) 
        • For Vegetables: 
        • 1 large YELLOW or RED BELL PEPPER, cut into thick slices
          1/2 large RED ONION, cut into chunks 
          1 large ZUCCHINI W/SKIN, cut in half and sliced 
          8 oz WHOLE MUSHROOMS (I used Monterey) 
          1 tbsp OLIVE OIL, EXTRA VIRGIN 
          3/4 tsp GARLIC POWDER 
          1/4 tsp CRUSHED RED PEPPER (optional or to taste) 
        *Gluten free option: Use wheat free tamari soy sauce or liquid aminos for soy sauce.

        Method
        1.  In a small bowl whisk maple syrup, soy sauce, rice vinegar, garlic clove, ginger, hot sauce, black pepper and salt if using. 
        2. Cut salmon filet into 4 equal size pieces and place skin side down in a shallow baking pan. 
        3. Spoon half the amount of maple glaze over salmon, cover tightly and refrigerate for 30 minutes (reserve remaining glaze to baste while cooking).
        4. Preheat oven to 425 degrees.
        5.  On a cooking sprayed large rimmed baking sheet, toss vegetables and mushrooms with olive oil, sea salt, black pepper and garlic powder, until well coated. Roast in the oven for 15 minutes, turn and cook an additional 8-10 minutes. 
        6. Remove from oven and sprinkle with crushed red pepper if desired.
        7. Turn oven heat up to 450 degrees. Place marinated salmon skin side down on a baking sheet or broiling pan lined with foil and sprayed with cooking spray. Roast for 5 minutes in the oven. Baste with glaze and cook another 5 minutes. 
        8. Top with any remaining glaze and broil for 2-3 minutes or until golden brown. Serve salmon garnished with sliced green onions and sesame seeds if desired, and roasted vegetables on the side. Serves 4, one piece of salmon and 1/4 of vegetables.

        Chicken Strips & French Fries




        Ingredients
        1 lb CHICKEN BREASTS
        1 cup PECAN HALVES
        1/4 cup WHEAT GERM
        SEA SALT AND PEPPER TO TASTE
        1/4 tsp GARLIC POWDER
        1 cup 100% LIQUID EGG WHITES
        2 medium SWEET POTATOES, peeled & cut into match sticks
        1 tbsp OLIVE OIL, EXTRA VIRGIN




        Method
        1. Preheat oven to 425 degrees. 
        2. Spray a metal cooking rack fitted inside a large rimmed baking sheet (line baking sheet with foil for easy clean up). 
        3. In a food processor or blender pulse pecan halves into fine crumbs.
        4. Place crushed pecans in a shallow dish with 1/4 c. wheat germ, salt, pepper and 1/4 t. garlic powder, toss to combine. Pour 1 c. liquid egg whites into a separate shallow dish and set aside. 
        5. Cut chicken breasts into 8 tenders or strips, about 2 oz each. 
        6. Dip each in egg whites and pecan crumb mixture gently pressing crumbs to cover and adhere to chicken. Carefully shake off excess crumbs and place onto the rack prepared pan. Bake for 15-20 minutes or until cooked through and golden brown. 
        7. Toss cut sweet potatoes in 1 T. olive oil, sea salt and pepper on a cooking sprayed rimmed baking sheet. Bake in a 425 degree oven for 20-25 minutes (flip half way through cooking time) or until browned and crisp. Serving size: 2 chicken strips and ¼ of French fry recipe (1/2 a potato). Serve with a side of light honey mustard, ketchup or bbq sauce.
