Lentil Salad With Spinach And Pomegranate

Ingredients

For the vegan lentil salad:
  • 3 cups cooked brown lentils I usually cook them the night before. Or if you like you can also use canned lentils.
  • 1 avocado, cut into slices
  • 2-3 handfuls fresh spinach
  • 1/2 cup walnuts, roughly cho_pped
  • 2 small apples, cut into small pieces
  • 1 pomegranate
For the tahini orange dressing:
  • 3 tablespoons tahini
  • 2 tablespoons olive oil
  • 1 clove of garlic
  • 6 tablespoons water
  • 4 tablespoons orange juice
  • 2 teaspoons orange zest
  • salt
  • black pepper
Servings: 3

Instructions
  1. Cook the lentils according to the instructions on the package.
  2. Cut the pomegranate into halves and remove the seeds. I like to do this in a bowl of water because then it doesn't get all messy.
  3.  Fill a large bowl with water.
  4. Place halved pomegranate into the water. Use your fingers to break the seeds out.
  5. Remove the white fiber that floats at the top of the water.
  6. Put all ingredients into a big salad bowl.
  7. Make the dressing: Place all ingredients into a food processor or blender and process until smooth.
  8. Pour the dressing over the lentil salad.

Chopped Kale Power Salad with Lemon Tahini Dressing

Ingredients
2 medium sweet potatoes, peeled and diced (you should get about 5-6 cups)
2 teaspoons + 1 tablespoon olive oil, divided
¾ teaspoons salt, divided
¼ teaspoon black pepper
1 bunch of curly kale, washed, stem removed and chopped (you should get 7-8 cups)
Juice of ½ a large lemon
1 (15 ounce) can garbanzo beans, drained and rinsed
1 large avocado, pitted and diced
⅓ cup dried cranberries
⅓ cup chopped Blue Diamond Almonds, Low Sodium & Lightly Salted
¼ cup chopped red onion
Lemon Tahini Dressing:
½ cup tahini
Juice of 1 large lemon
¼ teaspoon salt
3-6 tablespoons warm water, depending on how thick you want the dressing

Instructions

  1. Pre-heat oven to 375 degrees Fahrenheit. On a large sheet pan, toss together the diced sweet potato with 2 teaspoons olive oil, ½ teaspoon salt and ¼ teaspoon of pepper.
  2. Bake sweet potato until fork tender, 35-40 minutes, flipping once.
  3. Prepare the kale while the sweet potatoes are baking. Add the chopped kale to a large bowl with 1 tablespoon olive oil, juice of ½ a large lemon and a heaping ¼ teaspoon salt. Use your hands to massage the kale and make sure everything is mixed together, about 1 minute. Set kale aside until sweet potatoes are finished baking.
  4. Make the dressing by adding all ingredients to a bowl and whisking until a creamy dressing is formed. Add the water slowly until desired consistency is reached.
  5. There are two ways you can assemble the salad: You can add all ingredients to the bowl with the kale and mix until combined. Add desired amount of dressing to each individual serving. Or, you can add the kale mixture to separate bowls and evenly top with remaining ingredients.

1 tablespoon real maple syrup
1 tablespoon extra virgin olive oil
1 tablespoon sesame oil
2 tablespoons apple cider vinegar
1 teaspoon white sesame seeds
1 tablespoon soy sauce
pepper, to taste
1 garlic clove, crushed and then minced

Instructions
  1. Preheat the oven to 400 degrees.
  2. Line a baking sheet with parchment paper and lay out the butternut squash noodles.
  3. Coat lightly with cooking spray and season with salt and pepper and roast for 8-10 minutes or until cooked through but still al dente.
  4. While the squash cooks, combine all of the ingredients for the vinaigrette and set aside.

Creamy chicken Quinoa and Broccoli Casserole

INGREDIENTS
  • 2 cups reduced sodium chicken broth
  • 1 cup milk (I used 2%)
  • 1 teaspoon poultry seasoning
  • ½ cup flour
  • 2 cups water, divided
  • 1 cup uncooked quinoa, rinsed
  • ¼ cup cooked, crumbled bacon (optional... sort of)
  • 1 pound boneless skinless chicken breasts
  • 2 teaspoons seasoning (like Emeril's Essence or any basic blend you like)
  • ¼ cup shredded Gruyere cheese (any kind will work)
  • 3 cups fresh broccoli florets

INSTRUCTIONS
  1. Sauce: Preheat the oven to 400 degrees and generously grease a 9x13 baking dish (seriously, be generous because it really really sticks to the sides). Bring the chicken broth and ½ cup milk to a low boil in a saucepan. Whisk the other ½ cup milk with the poultry seasoning and flour; add the mixture to the boiling liquid and whisk until a smooth creamy sauce forms.
  2. Assembly: In a large bowl, mix the sauce from step one, one cup water, quinoa, and bacon and stir to combine. Pour the mixture into the prepared baking dish. Slice the chicken breasts into thin strips and lay the chicken breasts strips over the top of the quinoa mixture. Sprinkle with the seasoning. Bake uncovered for 30 minutes.
  3. Broccoli: While the casserole is in the oven, place the broccoli in boiling water for 1 minute until it turns bright green and then run under cold water. Set aside.
  4. Bake: Remove the casserole from the oven, check the mixture by stirring it around in the pan, and if needed, bake for an additional 10-15 minutes to get the right consistency. When the quinoa and chicken are cooked and the sauce is thickened, add the broccoli and a little bit of water (up to one cup) until the consistency is creamy and smooth and you can stir it up easily in the pan. Top with the cheese and bake for 5 minutes, or just long enough to melt the cheese.

4 Exercises To Reduce Tummy Fat Post Pregnancy

Chances are, your stomach is still sporting a post-pregnancy pooch, even if you've lost the bulk of your baby weight. Try these tummy exercises after pregnancy to firm up that stubborn midsection.

1.Gentle Start-Up & Healthy Eating:

Now that as a new mother you may have to focus on both yourself and your baby, eating smaller frequent meals is advised. Healthy proportions of fruits and vegetables, along with the diet are strongly recommended as breastfeeding has started. This will help you to lose fat instead of lean tissue.

After six weeks of rest, post-delivery, you are ready for a gentle start up like walking. In the beginning, try to manage at least 15 minutes of walk, 5 times a week. You can also enjoy walking by taking your little one in a pram or push chair with you, if the weather is pleasant.

2.Basic Stretching & Twisting:

After few days of your start up you can move on to basic stretching exercises which are quite necessary for all your muscles. For your torso or upper body, you can try some twisting exercises as well. Do not push it too much- keep it light; you must feel active and energetic after these exercises.

3.Pelvic Floor Exercises:

Pelvic floor exercises are quite versatile- your doc may have advised you to practice these during and after your pregnancy. You must complete ten numbers of squeezes reps that have to be taken three times a day. This ought to maintain your pelvic floor in a perfect shape as you wanted it to be.

4.Lower Tummy Exercises:

These tummy exercises after pregnancy will help you get back in shape.

  • Get down onto your knees and let your elbows rest on the floor- you can do this on your bed but the floor is much advisable.
  • Make sure that your back has to be straight and that your tummy muscles are completely relaxed and free of stress.
  • All you have to do is start to inhale your breath and while you exhale your breath, you must constrict your pelvic floor muscles. Now pull your belly button inside and upwards. Deep breathing is a must during this exercise.
  • The best way to get through your aim is by going for short walks everyday for a minimum of half an hour. The best part about this exercise is that you already have started to feel a little lighter on your knees and the weight seems to be shunning down slowly and gradually.
